Cinnamon Roll Muffins

Cinnamon Roll Muffins

Ingredients

  • ¾ cup granulated sugar
  • 1 large egg
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp ground nutmeg
  • ¼ cup vegetable oil
  • ¾ cup skim milk
  • 1 tsp vanilla extract
  • Cinnamon Swirl:
  • ½ cup dark brown sugar
  • 1 tsp cinnamon
  • 3 tsp hot, melted butter
  • Icing:
  • 1 cup powdered sugar; ¼ tsp vanilla; 1-2 tbsp milk

Instructions

  1. Pre-heat oven to 350 F; line muffin pan with cupcake liners
  2. Whisk sugar and egg in a large bowl then whisk in the remaining muffin base ingredients; fill each muffin cup about halfway; you should have some batter remaining
  3. Mix cinnamon swirl ingredients in small bowl and swirl the liquid cinnamon into each muffin cup; you should have more than half of the liquid cinnamon remaining
  4. Use the rest of the batter to fill the muffin cups the majority of the way; add another swirl of liquid cinnamon on top and reheat the cinnamon if it has solidified
  5. Bake for 20 minutes until puffy and let muffins cool in the pan
  6. While muffins cool, mix the icing ingredients, whisking until smooth and adding a small amount of milk if too thick. Drizzle on the muffins and enjoy!
